Meet the Mini Veggie Egg Muffins 🥚🥦🧀 — tiny, tasty, and packed with goodness! Perfect for little hands, big appetites, and busy mornings 💛


Recipe for 6 Muffins:


  • 3 eggs

  • 2 tbsp milk (or dairy-free)

  • ¼ cup chopped veggies (spinach, peppers, zucchini, carrots)

  • ¼ cup shredded cheese (optional)

  • Pinch of salt & pepper



Instructions:

  1. Preheat oven to 375°F (190°C). Grease 6 muffin cups.

  2. Whisk eggs + milk + salt & pepper.

  3. Stir in veggies and cheese.

  4. Pour evenly into muffin cups (¾ full).

  5. Bake 15–18 min until set.
