Meet the Mini Veggie Egg Muffins 🥚🥦🧀 — tiny, tasty, and packed with goodness! Perfect for little hands, big appetites, and busy mornings 💛
Recipe for 6 Muffins:
3 eggs
2 tbsp milk (or dairy-free)
¼ cup chopped veggies (spinach, peppers, zucchini, carrots)
¼ cup shredded cheese (optional)
Pinch of salt & pepper
Instructions:
Preheat oven to 375°F (190°C). Grease 6 muffin cups.
Whisk eggs + milk + salt & pepper.
Stir in veggies and cheese.
Pour evenly into muffin cups (¾ full).
Bake 15–18 min until set.
